getting ready to spend easter holiday in the sun and on the water with my family and best friends. in the process of making half batches of a variety of confectional delights – since everyone seems to have their own personal favorites i wanted to try and create a few options.
*currently hardening in the fridge awaiting white chocolate coating: pastel speckled pecan cream eggs.

stress of the year end combined with an exhaustive workout on monday has left me bedridden the past few days. walking i resemble the Cryptkeeper, thanks to a past lower back injury that likes to rear it’s ugly head every now and then which renders me incapable of standing up straight. lucikly this gem came in the mail and i’m crossing my fingers that, this too shall pass…and i can cook up some delectable treats tomorrow. 2012 i’m not giving up on you yet.

took some time off and ready to throw myself back into candy making. for some reason these shoes make me want to put rainbow sprinkles on everything, and that’s as good of a reason to get out of bed and back into the kitchen as any i can think of.
here’s what i’m planning on making next:
- candied ginger – in honor of mother’s birthday i plan to make one of her favorites.
- vanilla marshmallows with sprinkles. these i just think will look super awesome and i really want to make sure i have this process down since i plan on doing a video of said confection making shenanigans.
- chocolate peanut butter truffles
- old fashioned mints – to have on hand for guests
- chocolate gingerbread fudge
while i’m waiting for my marshmallows (vanilla, strawberry and champagne-this one i’m a bit wary of…) to set up over night, i’m enjoying my amazing present that came in the mail today!
i’m especially interested in the homemade popsicles and ‘summer bachelor’s jam’ – fruit preserved by covering and infusing with rum. yup.
delicious spiced almonds over a game of scrabble prompted me to see what i could come up with. first up: spiced caramelized pumpkin seeds.

i’ve made many varieties of marshmallows in the past, this is a new one i’d love to try and master.
